Day 13: Home Staging


Selling our house.....part II

Our house was on the market for 3 months with our neighbor as our realtor and it didn't sell.

We decided re-list with the realtor who helped us find the house we're selling and who sold us our current house.

To change things up we hired a home stager and the house looks fantastic.

Day 6: Gnocchi with Carmelized Onions, Pancetta and Peas





One of the things I like about our little local grocery store, Barons, is that they have a display of food samples out most times that I visit.  One of yesterday's samples was Gnocchi with Onions and Peas.  I had a taste and it was delicious so I decided to buy the ingredients and make it for dinner tonight.  As you can see from the picture it turned out beautifully with white gnocchi, green peas and red sun dried tomatoes.  My husband LOVED it!

Here's the recipe which serves 4.   Bon Appetite!

Gnocchi with Carmelized Onions, Pancetta and Peas


Ingredients

1 medium onion sliced thinly
3/4 cup diced pancetta
about 1 Tbsp. extra virgin olive oil
about 1 Tbsp. butter
1 pkg. gnocchi
1 tsp salt
5-6 turns of black pepper
1 pkg. frozen parmesan peas
1/2 cup sun-dried tomatoes (not in oil) cut into 1/2 inch pieces
Freshly grated parmesan cheese

Directions

Heat oil and butter in a large skillet on medium high until glossy.  Add onions and pancetta.  Continue cooking about 20-25 minutes until the onions are caramelized.
About 1/2 way through the cooking time add salt, pepper and sun-dried tomatoes.
In the meanwhile cook the gnocchi in boiling water as directed on the package.
When onion mixture is caramelized add the package of peas and continue cooking, stirring occasionally, until peas are warmed through.
When gnocchi is finished drain and add to onion mixture.  Stir until the gnocchi are coated and all of the flavors are combined.


Serve and enjoy.

Day 5: Brownies


This is my favorite quick and easy brownie recipe.  I usually have these ingredients around the house and can whip them up when a late night sweet craving kicks in.

Today was a cool and rainy day so I made a batch for an afternoon treat and topped them with cool whip and fresh raspberries.  
Bon Appetite

Fudge Brownies

1 1/3 cups flour
2 cups sugar
3/4 cup cocoa
1tsp. baking powder
1/2 tsp. salt
2/3 cup cooking oil
4 eggs
2 tsp. vanilla
1/2 cup nuts (optional)
1/2 cup chocolate chips (optional)


Combine dry ingredients and set aside. Combine oil, eggs and vanilla, add to dry ingredients. Add in nuts and chocolate chips if you opt for them.  Do not over mix. Spread in a 13x9 pan. Bake at 350F for 20 - 25 minutes.

Day 3: Photo Challenge

Seeing Star Wars once is good, but seeing it twice.....even better.  The first time we saw it was on day 2 and in a regular theater.  Today we went to see it in 3D IMax.  The movie was equally good and maybe even a little better in 3D.  More details seem to pop out at you the second time around and the questions are even greater.  Who is Rey?  Was that a little doll dressed up in an orange jump suit in her house?  Was that a fighter helmet from Luke's era she was wearing after she ate?  Is she Luke's daughter?  If so, who is her mother and why would she be left on Jaku?  Why did Ben (Kylo Ren) go to the dark side.  Does he have mommy and daddy issues, difficult teenage years?  Why is he so obsessed with Darth Vader?  Wasn't Darth Vader repentant when he died and ended up on the good side with Obi-Wan Kanobe and Yoda in the afterlife?  I distinctly remember the scene from Episode 6.   Who is Snoke?  Have we ever heard of him before?  I thought when the Emperor died that would be it for the Dark Side.  So many questions.....and more to come with my next viewing I'm sure.

Day 2: Safari Park


Today we spent a wonderful afternoon at the Safari Park.  The highlight of our visit was seeing the tigers in their new enclosure.  Previous to the opening of this enclosure the tigers were very difficult to find and many times we went without a sighting.  The new enclosure guarantees a good view of the beautiful and majestic cats.  Don't miss it on your next visit.

Day 1 : New Years Day in San Diego



Today, New Years Day 2016, our daughter came out from her bedroom in her bikini and headed out to the backyard while the rest of us were cuddled up in the house.  As I sat there snuggled up in my SOMA pj's I started thinking, am I cold because it's January or because it's actually cold outside?

After some pondering I've concluded that I'm cold because it's January.  We typically have 12 warm and sunny months here in San Diego so a girl has to pick a month or two and enjoy all things winter.  The next two months for my family will be full of cuddling on the couch, wearing our pj's, watching movies, eating soup and changing up our Starbucks orders from iced tea to hot chocolate.  We won't be doing any of this because it's cold outside, but because everybody needs a little winter in their lives.  Don't hate me Canadian family!
